We are seeking (two) Part-time, Men’s Locker Room Attendants to work (weekends only between 12 – 14 hours) from March/April until September/October. POSITION SUMMARY
Manage and direct all kitchen operations. Provide leadership, innovation, imagination and versatility in the kitchen.
Demonstrate creativity and innovation in planning menus for Marine Drive’s food & beverage outlets, private functions, take-outs menus and Club events. Provide delicious, nutritious and beautifully presented food to Members and guests that appeal to their varying tastes. Strive for excellence on a daily basis, finding ways to evolve and improve all that we do. Push the boundaries of our culinary offerings and utilize a wide variety of techniques including but not limited to; smoking, preserving, fermenting, sous vide, charcoal roasting, modern and traditional methods.
Inspire your team through your passion for people. Be accessible and visible to the Membership and staff and continually strive to gain and maintain their respect and confidence.
DUTIES
RANK / DUTIES
1. Manage, supervise and direct all food preparation and presentation for casual dining, formal dining events, private functions, take outs, Club events and staff dining.
2. Responsible for proper scheduling of all Kitchen staff in accordance with forecasted levels of business and with consideration of strict labour cost control and minimal overtime.
3. Maintain constant communication with staff and management in respect to menu changes, specials, new procedures, promotions, upcoming events, etc.
4. Counsel, guide and direct staff in a fair and consistent manner following the steps of progressive discipline when required.
5. Ensure all Kitchen staff are consistently abiding by Standard Operating Procedures as outlined by Executive Chef.
6. Plan daily and weekly specials for all food outlets with consideration of seasonal foods, cost control, Members needs and wants.
7. Respond and follow-up on all Staff and Member concerns, complaints and compliments.
8. Provide regular performance feedback to staff through the Club’s Entrepreneurial Operating System (EOS) performance tools.
9. Responsible for the staffing of Kitchen areas including interviewing and hiring.
10. Monitor all food preparation, storage and dishwashing areas to ensure safety and sanitation standards are met.
11. Maintain forecasting and fiscal reporting tools consistently, including purchase and labour trackers.
12. Prepare food costing for all menus and specials for casual dining, formal dining events, private functions, Club events and staff dining.
13. Be visible to Members in casual dining, formal dining events, private functions and Club events.
14. Research market and industry for specialty products, current trends and new food ideas.
15. Responsible for orientation and training of new employees and ongoing training of existing employees.
16. Prepare food specifications, including standardized recipes, food bibles and cost formulations for all new menus.
17. Conduct regular Kitchen staff meetings and daily staff briefings.
18. Report maintenance and repair needs to the Facilities Manager through the maintenance work order portal.
19. Assist the Executive Chef in the preparation of the annual food and beverage budget.
20. Proactively search and make recommendations to improve food quality, efficiency and service, increase revenue and reduce costs.
21. Other duties as requested by the Executive Chef, Clubhouse Manager and Chief Operating Officer.
